Crockpot Recipe of the Weekend - Seafood Chowder (Dimples' Style)

Ingredients:

2 tilapia fillets = $.83

1 cup of shrimp = $.50

2 cups homemade chicken broth (or one can of store bought broth) = $0

1 cup of chopped carrots = $.25

1 cup of chopped snow peas = $.82

1 can of cream of mushroom soup = $1

1 medium size onion, chopped = $.15

1 box of sweet corn = $.75

1 cup of water = $0


TOTAL COST = $4.30 (approximate)


Prep Time = 15 min

Cook Time = 4 hours on high


Directions:

Turn on crockpot on at the high setting. Add homemade chicken broth to crockpot. Chop up carrots, snow peas, and onions, if you haven't done so. Cube fish. It can be thawed or still frozen. Add everything to crockpot. Distribute cream of mushroom evenly in pot. Cover and let it cook.



Notice that I didn't use any seasonings. The homemade chicken broth and cream of mushroom added enough flavor for me. Of course if yours needs some then add salt and pepper to taste.

Final product:



This was good and hearty. I could smell it coming up the walk way to my apartment. It smelled so good. I added a lil bit of butter (1 tbsp) to the chowder to make it more rich. You can add potatoes to this dish if you want. I actually prefer sweet potatoes over white ones. I didn't add any because I am trying to keep my carb intake down.

I have some leftovers and may be bring it in for lunch at work tomorrow. I am just worried about it giving off a fishy smell when I reheat it at work. LOL! I have never taken any fish/seafood dish to work for this very reason. A fishy smell is one smell that is HARD to get rid of!!

My $100 grocery budget and tips for saving on your grocery bill

I did a post back in October on how I kept my grocery budget under $120. In that post, I had pictures of the grocery shopping I had done earlier in the day for a total of $29.76. I also listed a number of ways I keep my grocery budget so low. Today I did some grocery shopping for meat and some other misc items.
